Fully-cooked Osso Buco. Universally considered a gourmet entrée, Osso Buco—as served in the classic Italian style—is a labor-intensive main dish that requires four to five hours' preparation and cooking time. This precludes many restaurants and catering facilities from offering Osso Buco as a dining option.
That is changing as chefs experience Catelli's new fully-cooked Osso Buco. Taking just minutes to prepare, it offers excellent margins and is seen as a welcomed expansion of restaurant and catering menus.
Catelli's Osso Buco is presented in Old World Italian style. It is slowly cooked in carrots, tomatoes, onions, and celery in a veal demi-glace with accents of sweet marsala wine and Italian spices. Packed in easy handling boil bags, this product is menu available 24/7. Economically priced, Catelli's fully- cooked Osso Buco offers strong margins for a wide variety of food service operators.
Two varieties of the fully-cooked Osso Buco, both with Catelli's original sauce, are now available. A single serve Osso Buco is packed 12 individual portions per case. There is also a two-piece fully-cooked product that is designed for family-style operations, luncheon menus, and specials of the day.
