Mama Catelli's Veal Chops

Ingredients
• 4 veal chops, cut 1” thick
Marinade
• 1 cup olive oil
• 1 cup balsamic vinegar
• 8 fresh rosemary sprigs
• 8 fresh basil leaves
• 2 garlic cloves, crushed
• Salt and pepper, to taste
 
Preparation
- Combine first six marinade ingredients in plastic bag. Add veal chops, seal bag and marinate in refrigerator for at least one hour or overnight.
 - Bring chops to room temperature for at least one hour.
 - Remove chops from marinade; discard marinade. Place chops on grill over medium, ash-covered coals. Grill, uncovered, 15 to 17 minutes to medium (160°F) doneness, turning occasionally.
